    Just read monkey's post and have to say right on with the roasting of the ribeye roast. I used alton Browns technique in my own kitchen and it was killer. He show's you how to dry age and everything. Awesome!

      Medium rare for me too. I like the middle to be pink, but not bloody.

        Here is how I cook a steak temperature.........

        Rare cold red center, hot outside
        Medium rare. warm red center, hot outside
        Medium. Hot red center, hot outside
        Medium well. Hot pink center, hot outside
        Well done. Hot grey center, hot outside

        Any steak coming from my kitchen will be like this. Our waitstaff is trained to ask what color the customer wants the inside, and will explain how we do steaks when a customer says, "Pink, you know.........medium rare."

        This is the color chart I have used since I began cooking professionally and any chef I worked for in the past was very consistent on these temperatures.

        That being said, I only have worked three star kitchens and up and one non chain steakhouse and would only order a steak from that kind of kitchen.

        I eat steak maybe two or three times a year.

          Very Well Done (but not tough) topped with grilled onions and garlic and maybe some A1 or some kind of hot sauce
