Tonight I'm grilling bone in rib eye, girl's making some polenta with pecorino and parm cheese, and we are fixing caprese salad with the last of this Summer's heirloom tomato crop. I have eaten my weight in heirlooms this Summer, simply can't get enough.

I have what they call on the smoking forums an ECB, El Cheapo Brinkman. It's hard to work with but if you want to get into smoking it's the Cheapest way to go. They cost like $30-$50 I got mine for free from a side job I was doing. I use lump charcoal and hard wood chunks. I've never used electric or propane and have no desire to do so. Smoking is something that takes time and preparation so why go easy on the fuel source. That being said I use a propane grill for searing steaks, burgers, sausages, and chicken. In other words fast cooking. Next spring I intend to buy a Weberhttp://www.amazon.com/dp/B001I8ZTJ0/ref=asc_df_B001I8ZTJ01710359?smid=ATVPDKIKX0DER&tag=hyp rod-20&linkCode=asn&creative=395093&creativeASIN=B001I8ZTJ 0 the reason I'm up grading is because it has awesome heat control via properly placed vents which my ECB is severely lacking. I often have to stoke the coals with a hair dryer to keep it at the right temp. So if you can afford it go for the weber, if you just want to get into it and realize the set backs and are willing to make the effort to overcome them, Go with an ECB for a season. I've had mine for 2 seasons and have had great results but it takes some babysitting. But if you can be successful with an ECB I figure my food will only get better when using some better tools. Also if you get the brinkman, it is suppose to be a water smoker. This is bullshit, you want a dry smoke i never use water in mine, so don't........
@Roo- I've got the el cheapo electric version, cost around $40. It works better without the water, but you still want a heat sink down there. I use a a thick terra cotta planter tray. The cheapo ones don't seal up well and like Blue said the venting is not helpful. Mine doesn't get very hot unless there's no heat sink but your temps will vary and go way up like that. I can rock it at 190-200F which works good for slow. Next I'm getting a lodge camp dutch oven to use with coals outside. Can't wait
