Oh BTW I baked some killer Apple quick bread with apples from my tree last night. Ate some and passed some to the neighbors cus i made 2 loaves and I don't believe in freezing baked goods. They should be enjoyed while fresh...... I'll prolly do it again seeing I still have apples left, or I'll try my hand at apple sauce which i hear freezes welll........

Going to bbq while the bbq'ing is good tonight. Have some cheapie side ribs that I have precooked in the oven. I keep hearing about people boiling their ribs prior to finishing on the barbecue in order to tenderize them but I find that they turn out bland and rubbery that way. What I like to do is put about a quarter inch of water in the bottom of a broiling pan, place the ribs on the slotted cover that fits over top, season the ribs lightly with seasoned salt, and seal with foil. Bake low, around 225 for 1.5 hours. When they are tender, "unseal" the pan from the foil and loosely place the foil back on top. After the ribs have cooled, baste with your favourite bbq sauce and bbq until the sauce begins to caramelize. Turns out great every time. Plus, homemade fries to go with them tonight.

BTW, the easiest way to make the perfect omelette is to pour the mixed eggs into an oven safe pan on the stove over medium heat. Add salt and pepper. Don't even stir the eggs at all. Once the bottom sets up, put it in the broiler for a minute until the top is almost set. Take out, add the ingredients you want hot, and put back in broiler for a few minutes. Take it out and top with any ingredients you didn't want cooked. Just don't put teflon or plastic handled pans in the broiler! I use cast iron myself. Enjoy!

Nice snuffy! You're loving that skillet. I'm going to get after some BBQ pork and fresh pineapple curry fried rice tonight. With a side of sautéed yu choy in garlic. The rice is on the stove now in coconut water. Got some legitimate BBQ pork from a Chinese place near my house, the kind of place with ducks and chunks of pork hanging in the front window under heat lamps.
