I love to cook. My real love is charcoaling. No propane here. I'm really trying to perfect the art of smoking (not cigs!). I have a charbroiler with the side firebox. I think I'll try smoking a pork shoulder or a brisket tomorrow. My favorite pasttime. I-pod on shuffle, a twelve pack of beer, and a lot of smoke.

I got some Cornish hens on sale for $3.00 each. I split them, brined them overnight, and smoked them. I also made some cheesy broccoli and mushroom rice for the side.

2 years of culinary school and love to cook shit. Especially on charcoal grill! A friend of mine won the Top Chef award in New England last year (James Beard Award) and has been on a couple of T.V. programs with Rachel Ray, Martha Stewart and Andrew Zimmern. He makes some strange things though like a fish chowder with Cod Sperm, that just sounds nasty but people get it.

In honor of the World Cup a friend of mine from South Africa gave me the idea to make this dish, Oxtail Potjie. The recipe came from here: http://funkymunky.co.za/potjierecipes.html
Traditionally this would be made outdoors in a three legged cast iron pot over an open fire, but I just did it on the stove in my Dutch oven.
