I know you can also add beer but I have never tried that. What is the secret?
Try this one Twolf. It will do about 2 lbs of filets
1/2 cup AP flour
1/2 cup corn flour
1 tbsp corn starch
.25 tsp baking powder
.25 tsp baking soda
1 tsp salt
.5 tsp garlic powder ( or a lil more to taste)
.5 tsp onion powder " " " " " " " "
.5 tsp paprika """""""""""""""""""""""""""""""
.5 tsp white pepper
Mix all dry ingredients with a whisk
then add water or beer till thin consistency approximately a cup
let rest in fridge for 10 mins
then add more liquid till it is loose (thin)
dunk filets in and drop in 375˚ oil ( I use a cast iron dutch oven, something heavy that conducts heat well) fry till golden brown and remove to a cookie sheet with a rack so fish doesn't lay in oil. excess oil will drop to pan below this is much better than paper towels....
I made some boneless pork chops that were out of this world, this weekend. I dried the chops and seasoned them with freshly ground black pepper and Kosher salt. Then I browned them well in peanut oil. While they were browning, I sprinkled them with garlic powder. Just before completing the browning, I sprinkled them with some herbs de Provence.
Then, I removed them to a plate and deglazed the pan with about a cup of half Cabernet Sauvignon and half water. I added a dollop of Worcestershire sauce (maybe a tablespoon) and about a teaspoon of Kitchen Bouquet browning sauce. Returned the chops to the pan, covered and reduced the heat to simmer them for about an hour, turning them every 15 minutes. I served them with the pan sauce, baked sweet potatoes, and green beans. The sauce had thickened to a nice richness and the chops practically fell apart under the knife. Altogether wonderful.
I was at my parent's house the other day and they just finished having the kitchen remodeled. Turned out great, my best friend did the job. New everything. Anyways, my mom had a box of kitchen stuff to get rid of and asked if my GF and I wanted it. My GF knows I've been wanting a cast iron skillet for a while so she said "I don't know if there's any cast iron in it, but we'll take it". I just went through the box last night and low and behold a real nice Lodge 10" skillet. I'm stoked. I made a breakfast this morning with shredded potatoes, green onions, garlic, bacon, cheese, and eggs. It was great. Right now I have a cornbread baking in it with, bacon, cheese, jalapenos, pimentoes, eggs, corn meal, sugar, onion, bacon grease, and that's about it, oh wait plus creamed corn. Anyways, really excited about my new cast iron skillet
hey everyone! this is an awesome thread! i love to cook but i just recently decided to take to vegetarian route for awhile to help lower my cholesterol, get back in shape, and to just plain get healthy again lol. I tell ya what, college can be a real killer on health. but getting back to my main reason for this post, does anyone have any good vegetarian recipes? most of all the cooking i did before was with meat.

Just use whatever recipes sound good but switch the meat out for beans, tofu, and nuts. You can get fake anything like a tofurkey
