It's a shame that they're only available for such a short time. Maybe that's why I like them so much.

Fiddle head fern fronds are delicious. When I saute them, I a little acid (lemon or vinegar) to brighten the overall flavor profile of them.

If you can, tempura some. If they are a little woody (old and hard), a light blanch might be in order first.

i just wanted to say fiddleheads. fiddleheads.

Delicious. I try to pick them in their razor thin window but some years just don't manage to catch them. Another fav of mine is cattails - strange, I'm sure, but delicious. If you get the tops when they're still green and before they turn to pollen sacs and pop you can boil them up and eat them like mini corn-on-the-cobs. Bit of salt, pepper, and butter...mmm.



Just the top half - snap 'em off and boil away.

speaking of foraging- I think I'm gonna go on a little morel hunt this weekend. Prolly on Sunday as we just had a bunch of rain. Man I hope i find some their the best.
