Off the top of my head I would suggest getting some classic Swedish snus so you have something to compare it to. I don't know what flavors you're working on but you should be able to compare it to something similar.
Of course the other option is to have some experienced snuseairs (a new word for the snus dictionary) as testers. We won't even charge you anything.
I didn't have stomach or throat problems when I first started. I did, however, have lots of lip/gum burn at first. Your body just isn't used to having irritants in that part of your mouth, especially if you've never used oral tobacco before. After using snus for a few months, the only way I could feel the burn again was either with strong nicotine snus (which also no longer burns) or certain types of flavored portions like General Wintergreen. That one gave me a burn even after long use of Thunder-level nicotine products. Something about that greasy mint on the pouches burned, but that also went away before I even finished a whole can of it.
Don't forget, most of us came from smoking or dipping which may have made it less noticeable when we started snus. I was using dip pro come osseous smoking when I found snus and dip burns way worse than snus ever did...but it still burned my top gum until I got used to it.
A snuffer trying oral tobacco for the first time may find it uncomfortable.
