Well I have just revisited the lös version of this and it really gets better with a lot of ageing! It has lost almost all of it's bitterness and come down a touch in the nicotine stakes as well.

It's settled down in to a strong dark orangey bergamot snus that tastes more natural than almost all the commercial offerings I've had - it reminds me most of Landstroms in flavour but it is definitely more robust and darker - and slightly easier to bake than the Landstroms ever was.

If you're waiting by the post box for your can - don't worry - I've been too busy to send them yet but we're playing in S****horpe tomorrow and I'll try to get to a post office ... I can't imagine there's going to be a load of other things I'm going to want to do in S****horpe!

And PP - I've decided to not send you this one as I think it is probably stronger than your heart should be subjected to! I'm working on one for you.

      Hahaha

It won't let me write the name of the town because it has a word in it that is generally accepted as the most offensive word for female genitalia!

Anyway - for those who want to give it a go ... this recipe is really quite a success and I've put the method below:

        Ingredients at start:
50g Dark Air Cured cigar tobacco
50g Virginia cigarette tobacco (cased for smoking)
4 level teaspoons of Maldon sea salt flakes (approx 8-10g)
        200ml water
2" piece of macerated liquorice root (for natural sweetening)
        2 shards of cinnamon bark
        5 black peppercorns
        The zest of one orange
A tiny sliver of a tonka bean
        a piece of root ginger

The 200m of water was boiled with the liquorice root, cinnamon, peppercorns, tonka bean, orange peel and salt and left to simmer until it had reduced by about half the amount. The liquid was strained off in to a measuring jug and the juice of the ginger root was added - about 4tsp of pure juice (the easiest way to juice ginger is to grate it and then squeeze the pulp through a seive). This liquid was made up to 160ml with boiled water to make sure no chlorine was still in it.

The tobacco was turned in to flour by means of a food processor and then an electric coffee bean grinder so that it was quite fine. The two types of flour were mixed thoroughly and then the liquid in the previous step was thoroughly mixed with it to form a snus like consistency. This mixture was placed in a kilner jar (mason jar in the US I think) - the rubber seal was taken off and then the container was placed in an oven at 80ºC for 48 hours. The temperature of the snus mixture was checked and was generally at around 70-75ºC

After the cook - it was left to cool a little and then the following were added:
2tsps of lye water from a chinese supermarket (a solution of potassium carbonate)
1/2 tsp of Ammonium carbonate powder (hard to find - but available in Germany as Hirchhornsalz and also known as bakers ammonia for making cookies)
Enough water to dissolve (about 20ml)
        1/2 tsp of Glyerine (Glycerol)
1 small drip of Stern's Hickory liquid smoke
        4 drops of mandarin oil
18 drops of bergamot essential oil

The ingredients above were mixed well by stirring and then added to the snus mixture. It was mixed thoroughly - giving off the usual heavy ammonia smell of this part of the procedure.

The kilner jar was returned to the 80º oven for a further couple of hours after which time it was removed to cool and age in the jar for at least a week and optimally slightly longer with enough ventilation for the ammonia fumes to escape.

At that point half of it was made in to portions and placed in cleaned & sterilised used snus cans. The other half was left as loose and placed in sterilised used snus cans too.

I hope this helps anyone looking to make a traditional(ish) tasting snus. The type of tobacco will very much dictate the final flavour profile of your snus - and the flavouring ingredients can be messed around with - but I think the liquorice, ginger and cinnamon at the start - and the essential oils are probably the most important for a good smooth balanced flavour in the end.

        Cheers

Thanks for the can in the post SJ. It's good stuff. Really nice packaging obviously as can be seen but a great flavour too. Love the ingredients where you haven't just gone for essences as far as i can see rather than mostly using actually spices like cinnamon bark and things. Great portion bags. Keep up the good work sir! A true artisan product.

Glad you got it safely Ansel!

I know it isn't exactly as I was hoping it would be - but I'm still at the experimentation stages with processing, tobacco types and flavourings. The fact that glycerine was added (like it is in lös recipes) has made the portions go a bit odd when you use them. The tin labels were just for showing off!

Let me know exactly what you think of the tastes though - either here or in a PM - it would be fantastic to get some feedback other than just my own tastebuds.

                Cheers

                    Hi Squeezy,

Just seen this thread again. So sorry I didn’t get back to you. Looking at the date I was leaving for India. I remember trying the snus and enjoying it but I had to move from where I was living and I guess it got lost or misplaced in the move. Keep up the good work.

                    Ansel.

I made one of his Snus recipes long ago, I just couldn't use Los as well as others, however I've since seen available portion sachets.
