With the Wine & Dine, I drop a few drops of concentrate (4-6 to start with) between both sides of a portion. If using extracts, I 'paint' both sides with a Q-Tip (yeah, I know I'm cheap but it's sanitary and it works). After a first taste-test I can add more if the flavor is too subtle. So far, I've already done test batches of food-grade clove essential oil (the clove extract is due in this week), cinnamon extract, and pie spice extract; the W&Ds have remained dry right out of the vacuum process with a hint of flavor like the rest of the Northerners. Next time I'll add more of the flavors and see what happens.
I vacuum-marinate, which works much quicker than just letting them sit for a few days. I place the portions on a cut-to-fit piece of dry wax paper and then flavor both sides of the portions. The size of the paper depends on the zippered pouch I'm going to use to store the finished portions; I cut the paper to twice the size needed so I can fold it over the portions before placing in the pouches.
Once I have the portions flavored and pouched, I place them unzipped in a single layer with no overlap in an appropriate size Ziploc vacuum bag; the process of vacuum-sealing the bag also generally zips the smaller pouches. I let them marinate 6-12 hours and they're good to go (3 hours if I'm really anxious). I do this for all portions, not just the Wine & Dine. My Kahlua and Bailey's Irish Cremes are really good (as I'm sure jagmanss might attest to since he's pretty much using the same process).

btw, FTW, I use flavor extracts and concentrated drops from faerie's finest. Good prices and free Priority Mail shipping on orders of only $25+. The zippered pouches I use hold 6 portions; I got them at Walmart, in the pharmacy section, in packages of 50 (they're sold as pill pouches). The dry wax paper I've bought at BJ's for years; it's similar to those papers you find in the supermarket bakery section for handling pastries.
