I've been using snus for over 6 years and actually have about 20 different cans open at any given time. As long as you keep them in the fridge, they'll be fine. If they start to dry out, spritz them with a few sprays of water, pop em in the fridge and they will come back in a day. White portions will dry out quicker than originals if they're not kept cold no matter if they're open or not. For a beginner, my recommendation would be to just have fun with them.
Like I said, the open cans will last pretty long in the fridge and like others said, your tastes will change the longer you use Swedish snus so, don't be quick to chuck a can in the beginning. Open cans will last a month or two before they begin to lose moisture and when they do, just spray some Chateau Tap on them. Writing everything down, like lx said, is too much like work so, just keep the ones you liked separate from those you didn't. When you've tried them all, go back and do it again. You'll see that some of the flavors you didn't care for the first time, you may like! At least that's how it went for me. ;-)
